hummus and monterey jack wrap - rita's recipes lyrics

ingredients
1-1/2 cupsprepared hummussee savings
4 large flour tortillas (at least 12-inch diameter)see savings
1 cupshredded reduced-fat pepper monterey jack cheese
1 cupchopped red bell peppersee savings
1 cupshredded carrotssee savings
3 baby cuc-mbers, thinly slicedsee savings
2 scallions (white and green parts), choppedsee savings
2 tomatoes, thinly slicedsee savings
2 cupsshredded romaine lettucesee savings

directions
1. for each wrap, spread hummus over top 2/3 of a tortilla. layer on cheese, peppers, carrots, cuc-mbers, scallions, tomatoes, and lettuce in a row in the center
2. compress filling slightly, and then fold the bottom of the tortilla over the filling. fold in about 1 inch of the sides and roll firmly away from you, compressing the filling as you roll
3. cut each wrap in half on a diagonal

tip:
if you can’t find baby cuc-mbers, use 1/3 of a peeled english cuc-mber (the long, skinny variety shrink-wrapped in plastic at the supermarket)
